Placing a deposit will guarantee a lamb, reserved in your name, at time of harvest. >>>Once harvested, you will be invoiced for the lamb using the fomula: live weight x $3.25/lb, less deposit paid, plus handling fee of $25.<<< You will also have to pay the processor for cutting and packaging your order before it can be picked up (usually 10 days after drop off). The processing fee ranges anywhere from $80 - $120 (this is only an estimate, you may call the processor for an actual quote). >>>>>>FINAL COST WILL BE AROUND $310 (incl. processing) for a whole lamb and approx. 40 lbs of meat (1/2 that for a half lamb) - THIS IS AN ESTIMATE ONLY<<<<<< Our spring lambs are the late births from our younger mother ewes (too young to give birth by January) and are born after the majority of the herd lambs in January. They arrive anytime between Feb - May and, therefore, we give them a little extra time to finish out making them avail. to harvest the following spring (March of each year) - you will get an e-mail with the exact harvest/processing date then, your order will be available approx 2 weeks after that date - timed to arrive before Easter) This harvest comes from Katahdin hair sheep or a mix of Doper/Katahdin which we refer to as Kadorpin. Both breeds offer a very mild, flavorful meat without the awful lanolin/wild game taste that wool lambs are usually notorious for. The Katahdin lambs are leaner and will weigh approx. 70lbs at harvest time. The Kadorpin lambs are a bit stockier and will weight approx. 85lbs at harvest. Please note if you have a preference for a leaner or stockier lamb when placing your order. Yield will be approx. 40% of live weight but varies based on your custom processing order. Once you place a deposit, you will receive e-mail notifications and reminders throughout your wait time (from deposit through harvest/meat collection). Timeline: SEPT-FEB: place deposit | MAR: lambs are loaded to go to the processor and invoices are sent out - invoice must be paid within 7 days | 10 DAYS AFTER DROP OFF: Lamb meat is usually ready to be picked up - processor's invoice must be paid before meat can be collected | FIRST SATURDAY AFTER MEAT IS READY: meet at drop off location to collect your meat if you have not already picked it up, personally, from the processing plant.

These are slower growing red broilers that reach 4-7lbs in 12-14 wks. (not the typical fast growing white cornish cross processed at 6-8wks, readily available in most other markets). The meat of these birds can be fried, baked and stewed regardless of their identification as “fryers" which is the current lingo for young meat chickens. Since they are a meat breed, they are not suited for egg production. This order is for a whole, plucked, cured, packaged and frozen whole birds. This is for the bird only - we may have feet and edible organs available upon request (no charge) with orders of more than 6 birds.
