Cauliflower "Beef" Lettuce Wraps
A vegan veggie-based taco night.
Ingredients
- 1 head cauliflower, riced
- 1 8oz pkg baby bella mushrooms, riced
- 2 Tbsp butter
- 1 med white onion
- 1-2 tsp season to taste w/ soy sauce, garlic, cumin, paprika, chili powder, and s&p
- 1 . serve w/ tomato, avocado, vegan queso dip, cilantro, and lettuce for making it a wrap
Instructions
- 1Rice the cauliflower and mushroom, then set aside.
- 2Sauté the onion till tender, then add the cauliflower and mushroom, and cook till tender. Most of the liquid from the mushrooms will have evaporated.
- 3While cooking, season to taste with soy sauce, garlic, cumin, paprika, chili powder, and s&p
- 4Serve as a lettuce wrap with tomato, cilantro, avocado, plant-based queso, etc.
